Yesterday was the Superbowl and I must tell you, these Blue Corn Vegetable Confetti Nachos didn't last 5 minutes.
No one even noticed I didn't add meat, even my husband was fooled. I am not sure if it was due to him being all into the game, but he never said a word!
Lastly, I took my favorite Blue Corn Tortilla chips and loaded them up with the veggie mixture and cheese!
After 5 minutes under the broiler, I loaded them up with more goodies, like avocados, fresh tomatoes, more cheese and sour cream.
This is my new favorite game day snack!
Blue Corn Vegetable Confetti Nachos
Prep Time: 5 minutes
Cook Time: 15 minutes
Total Time: 20 minutes
Servings: 4
Ingredients:
2 cups pinto beans, canned, organic, drained, rinsed
2 cups corn, organic
2 cups jack cheese, grated
2 cups cheddar cheese, grated
2 jalapenos, fresh, diced
1 cup grape tomatoes
1 avocado, diced
1/4 cup bell pepper, diced
1/4 cup onion, diced
1 garlic clove, minced
1 teaspoon black pepper
1 teaspoon chili powder
1/2 teaspoon oregano, crushed
1/2 teaspoon creole seasoning
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
lime to garnish
Blue Corn Tortilla chips
extra virgin olive oil
Directions:
Preheat oven to broil.
Mix seasoning blend together and set aside.
Add about 1 tablespoon of olive oil to pan over medium heat, add bell pepper and onions, saute 5 minutes, season with 1 teaspoon of seasoning blend, add garlic and cook 1 minute more.
Add corn and season with 1 teaspoon of seasoning blend and cook for about 5 minutes, add beans and seasoning with remaining seasoning, cook 5 minutes more.
To assemble nachos, in an ovenproof dish lay chips flat, top with veggie mixture, top with cheese and jalapenos, broil for about 5 minutes, until cheese melts.
Remove from oven, top with fresh tomatoes, sour cream, green onions, avocado and more cheese if desired.
