Spicy Corn Salsa


 

It's almost Superbowl time and what's better than a nice spicy bowl of Corn Salsa!

 
I love salsa and what I love even more about my Spicy Corn Salsa is that it's served warm, unlike traditional salsa that is served room temperature or chilled.

 
If you prefer it chilled it will still taste great, I just love it hot out the pot with a nice bowl of corn chips to scoop it up with!


All I did was saute some peppers, onions, and jalapenos, seeded if you don't want it super spicy, in a pan with extra virgin olive oil.


Add the rinsed, drained, organic corn and some spices and that's it...less than 15 minutes and it's eating time!


Grab a big bowl of chips, squirt a little lime and enjoy!

Spicy Corn Salsa

Prep Time: 5 minutes
Cook Time: 15 minutes
Total Time: 20 minutes
Servings: 2-4

Ingredients:

2 cups corn, organic
1/2 cup bell peppers, chopped
1/4 cup red onion, chopped
1 jalapeno, fresh, diced
1 teaspoon garlic, minced
1/2 teaspoon creole seasoning
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon chili powder
1/4 teaspoon oregano, dried, crushed
extra virgin olive oil
corn chips
lime

Directions:

Mix seasoning blend and set aside.

Add about 1/2 tablespoon olive oil to pan over medium heat, add bell peppers, onion, and jalapeno, saute for 5 minutes, add 1 teaspoon of seasonings and garlic and cook 1 minute more.

Add corn, remaining seasoning and cook for about 7-8 minutes, until corn is tender.

 Serve with corn chips and enjoy!
