I have yet to meet a person who doesn't love grilled cheese sandwiches.
If you're out there, note to self, you're missing out on food goodness!
Think about it, you have crusty bread, filled with loads of cheese and any other topping your heart desires.
I love to use baby peppers because they taste so delicious once you roast them with a little olive oil, pepper, and salt.
You can also use butter if that's what you prefer, or a mixture of both.
This grilled cheese is all that and more!
Look at all this cheese and roasted peppers which gives you a nice bite in the middle of all the gooey cheese.

Roasted Peppers Grilled Cheese
Prep Time: 5 minutes
Cook Time: 15 minutes
Total Time: 20 minutes
Servings: 4
Ingredients:
10 baby peppers
8 slices country white bread
8 slices sharp cheese
8 slices jack cheese
extra virgin olive oil
pinch of salt
pinch of pepper
Directions:
Preheat oven to broil. Place peppers, salt, pepper, and about 1 tablespoon of olive oil into a roasting pan.
Mix well and roast peppers until slightly blackened. Remove from oven and slice peppers.
Place cheese on bread, add peppers.
Brush both sides of bread with olive oil and grill in a hot pan until cheese melts, using a spatula to put pressure on bread to help melt everything.
