Greek Rice Pilaf



Looking for a way to take boring rice and turn it into a full meal?

My Greek Rice Pilaf is the perfect dish!


I used Thai Jasmine rice but you can use any type of rice you prefer. I love making this with basmati or even long grain rice.

Just make sure you cook the rice according to package directions. 

I added finely grated carrots, then finished off the dish with fresh squeezed lemon juice and zest, minced Italian parsley and lots of crumbled feta cheese.

Don't forget the drizzle of extra virgin olive oil.


This is a wonderful, flavorful, meal.

You could eat this as a side dish, but I love having it for a nice lunch with a side salad.

Greek Rice Pilaf 

Prep Time: 5 minutes
Cook Time: 25 minutes
Total Time: 30 minutes
Servings: 4

Ingredients:

2 cups Mahatma Thai Jasmine Rice 
3 cups chicken broth or vegetable broth
3/4 cup feta cheese, crumbled
1/2 cup carrot, grated
1/4 cup Italian parsley, minced
1 lemon, zested, juiced
1 teaspoon black pepper
pinch of salt
drizzle of extra virgin olive oil

Directions:

Bring broth, pepper, salt, and 1/2 of the grated carrot to boil. Stir in rice, cover and cook over simmer for 15 minutes. Remove from fire and allow to steam covered 10 minutes.

Flake rice with a fork, add remaining ingredients, stir well. Drizzle with olive oil and serve warm.
