Yellow Rice with Sweet Peas



I am hooked on salads and my daughter is hooked on rice! If you haven't realized as of late, I cook a lot of rice.

Rice is a daily staple in my house which means I am always looking for ways to make my rice flavorful.

My daughter loves her rice yellow, every since she watched me turn the broth bright yellow with the addition of turmeric, she wants her rice yellow everyday.

I was informed by my little food critic that white rice is boring, and our food needs vibrant colors, lol.


I will admit this is a very simple dish, I added peas because my daughter loves peas and it's green for that extra vibrant color the little girl requested.

Yellow Rice with Sweet Peas

Prep Time: 5 minutes
Cook Time: 25 minutes
Total Time: 30 minutes
Servings: 4

Ingredients:

2 cups Mahatma Thai Jasmine Rice 
3 cups chicken broth or vegetable broth
1 cup peas, frozen
1/2 cup onion, diced
1 teaspoon of turmeric powder
1 teaspoon Italian seasoning
1 clove garlic, minced
1/2 teaspoon black pepper
pinch of salt
extra virgin olive oil

Directions:

In a rice pot add about 1 tablespoon olive oil over medium heat. Add onion and saute for about 5 minutes, add rice, garlic, and seasonings, saute for about 1-3 minutes.

Add broth, bring mixture to boil. Cook covered for 15 minutes, remove from heat, allow rice to steam 10 minutes. Stir in peas and fluff rice with a fork.
