Rice is an important food in my house.
We pretty much eat rice everyday, which by the way can get kind of boring.
To keep the spunk in my rice, I have to always find new, creative ways of bringing life into my rice.
Today, with the help of citrus and turmeric powder, this rice is on a whole other level of food goodness!
You can use vegetable broth, but I often use chicken broth. Make sure it's low sodium broth and organic if possible.
Next, add the rice and cook covered over simmer for 15 minutes. Remove from heat and allow the rice to steam another 10 minutes.
Lastly, fluff the rice with a fork, stir in feta cheese and parsley.
If you don't like feta cheese, parmigiano reggiano works well in this dish.
Yes, it's that simple. Rice can be turned into such wonderful meals. Look at the beautiful color, all due to the turmeric powder.

Yellow Rice with Turmeric, Citrus, and Feta Cheese
2 cups Mahatma Thai Jasmine Rice
3 cups chicken broth or vegetable broth
3/4 cup feta cheese, crumbled
1 teaspoon of turmeric powder
1 clove garlic, minced
1/2 teaspoon cumin powder
1/2 teaspoon black pepper
1 lemon, zested, juiced
1 lime, juiced
1/4 cup Italian Parsley, chopped
pinch of salt
drizzle of extra virgin olive oil
Directions:
Bring broth, citrus juice, zest, garlic, turmeric, cumin, black pepper and salt to boil.
Stir in rice, simmer, covered for 15 minutes. Allow rice to steam off fire for 10 minutes.
Fluff rice with fork, stir in feta and parsley. Serve warm.
