Black Eyed Peas Breakfast Quesadillas



I wanted to share with you one of my favorite veggie eats.

I love veggie quesadillas, you can fill them with so many different things and I promise you want miss the meat!


I decided to use black eyed peas today, because like pinto beans, they give the quesadillas a nice creamy texture.


This dish goes together in a matter of minutes.

I sauteed some black eyed peas with a little onion and spices, added beaten eggs and cooked the egg until nice and soft.


Next, heat the tortilla shells in the microwave for about 10 seconds to soften. Top half the shell with cheese, egg/peas, cheese.

The cheese is being used as a glue to hold the tortilla closed.


Finally, fold the tortilla over and cook in a little olive oil, using another pan to press the quesadillas flat in the pan.


After a few minutes, the cheese melts and it's time to serve these babies up with sour cream for dipping.


All done, time to eat! BTW, I made a lot of these for my daughter to have for breakfast before school.

These quesadillas also freeze very well and can be reheated in the oven or microwave.

Black Eyed Peas Breakfast Quesadillas 

Prep Time: 5 minutes
Cook Time: 15 minutes
Total Time: 20 minutes
Servings: 4

Ingredients:

2 cups black eyed peas, canned, rinsed
2 cups cheese, grated
4 flour tortilla shells
4 eggs, beaten
1/2 cup red onion, diced
2 cloves garlic, minced
1 teaspoon black pepper
1 teaspoon creole seasoning
1/2 teaspoon chili powder
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
extra virgin olive oil
sour cream to garnish
cilantro to garnish

Directions:

Mix seasoning blend together and set aside.

Add about 1 teaspoon olive oil to pan over medium heat, add onion and saute a few minutes, add garlic and black eyed peas.

Season with 1/2 of the seasoning blend and cook for about 5 minutes.

Add remaining seasonings to beaten egg, pour into pan with peas, allow to set up for about 1 minute, then using a fork scramble eggs and peas, cook for about 3 minutes.

To prepare quesadillas, in a nonstick pan add olive oil. Assemble quesadillas by adding a little cheese on one side of the quesadillas, top with egg/pea mixture, top with more cheese, fold over.

Place in skillet and cook about 3 minutes per side. Using another skillet to press down the quesadillas in the pan.

Remove, serve with sour cream and garnished with cilantro.
