Roasted Indian Curry Fries



I am constantly looking for ways to make potatoes taste differently, without frying.

My family considers me the french fry lady because I am always turning potatoes into my personal masterpieces.


Today, I am sharing with you my Indian Curry Fries.

My love for Indian food made me invent these spicy fries.  

I take curry and turmeric powder, lots of crushed garlic and a few other of my favorite spices.


I coat the wedges in lots of extra virgin olive oil.

Roast them for about 1 hour and it really is that simple.


I garnish my wedges with a little cilantro and serve with spicy ketchup. This is a healthy, spicy treat and no frying required!

 
Roasted Indian Curry Fries

Prep Time: 5 minutes
Cook Time: 1 hour
Total Time: 1 hour 5 minutes
Servings: 4

Ingredients:

6 medium potatoes, sliced in wedges
1/4 cup extra virgin olive oil
2 tablespoons garlic, minced
1 tablespoon curry powder
1/2 tablespoon creole seasoning
1/2 tablespoon black pepper
1/2 tablespoon onion powder
2 teaspoons turmeric powder

For the Spicy Ketchup:

1 1/2 cup of ketchup
1 tablespoon hot sauce
1/2 teaspoon curry powder

Directions:

Preheat oven to 450 degrees. Rinse potatoes well and pat dry.  Slice potatoes into wedges and place in a large freezer bag.

Add all ingredients to bag and mix well.

Place on baking sheet and roast potatoes for 1 hour, turning after 30 minutes, until potatoes are tender.

Serve with spicy ketchup, by mixing all ingredients together in a bowl.
