Goat Cheese Flatbread Pizzas with Sauteed Asparagus Spears



It's pizza time again! I think I probably make pizza about 3-4 times a week. I find that for those of us trying to eat meatless, pizza is our friend.

You can load it up with all types of veggies and have a quick, healthy, meal in minutes.


Today, it's all about goat cheese and asparagus.  If you don't like goat cheese, try replacing it with mozzarella or fontina cheese.

I love pretty much all cheeses so I don't have that problem.


Remove the tough ends off the asparagus and saute for about 5 minutes in a little olive oil.


Assemble pizza and bake for about 15 minutes.

Remove pizza from oven and immediately grate parmigiano reggiano cheese and sprinkle some crushed red pepper on top!


I cut my pizza up into little wedges, if you prefer, you can just roll the whole pizza up and eat it like a sandwich!

Cook Time: 20 minutes
Total Time: 21 minutes
Servings: 2

Ingredients:

4 ounces of soft goat cheese, crumbled
2 Stonefire Naan Flatbread
10 asparagus spears
olive oil
crushed red pepper
black pepper
parmigiano reggiano cheese, grated

Directions:

Preheat oven to 375 degrees.

Remove about 1/2 inch off the ends of asparagus spears.

Add 1 teaspoon of olive oil to a pan over medium heat. Saute asparagus spears, season with a pinch of black pepper, cook for about 5 minutes.

Drizzle olive oil over flat bread, top with asparagus spears and crumbled goat cheese.

Bake flatbread for about 15 minutes. Remove from oven, grate parmigiano reggiano cheese on top of pizzas. Sprinkle crushed red pepper and enjoy!
