Day 12: 21 Day Detox with a Quick, Easy, Pecan, Cranberry, and Toasted Coconut Bark



 

I can't believe it's already day 12 of the 21 Day Detox! Time is moving so fast, it's almost hard to keep up!

Yesterday I posted my Vegetable Lasagna which was a huge hit with all my foodie friends.


Today, I wanted to do a sweet treat for us.

My Quick and Easy, Pecan, Cranberry, & Toasted Coconut bark is the perfect snack!

 
Now, I used half dark and half milk chocolate, using all dark is a much healthier alternative.

The husband doesn't like dark chocolate, this was the compromise I made with him.


The hardest part of making this snack is waiting for it to set up in the refrigerator, it took about 1 hour.

I think I just created my new favorite sweet treat!

Day 12: 21 Day Detox with a Quick & Easy Pecan, Cranberry, & Toasted Coconut Bark

Prep Time: 5 minutes
Cook Time: 1 minute
Total Time: 6 minutes plus hardening time
Servings: 4

Ingredients:

4 3 ounce Endangered Species Organic Chocolate Bars, Dark or Milk
1 cup pecans, chopped
1 cup cranberries, dried
1/2 cup shredded coconut
1 teaspoon coconut oil
wax paper

Directions:

In a dry pan over medium heat, add coconut and toast for about 3 minutes, stirring constantly.

When half the coconut is toasted, remove from heat and stir until all the coconut is golden brown.

Line a 8X8 dish with waxed paper, oil with coconut oil and set aside.  Leave an overhang of wax paper for handles

In a microwave safe dish place chopped chocolate bars and microwave for 20 seconds at a time, stirring well after each 20 seconds, repeat, until melted.

Immediately stir in half of each, pecans, cranberries, and toasted coconut into melted chocolate, pour out quickly onto oiled dish, spread evently. Immedaley top with remaining ingredients. Press down gently.

Refrigerate for 1 hour or until hardened. Remove from refrigerator, use wax paper handles to lift out of dish and break up into bark.
